Fresh Lasagna Sheets
Start by making the Ecco Pasta according to the directions. Roll your fresh pasta to about 1/32” thick for traditionally light lasagna noodles. Store bought dry lasagna noodles can tend to be very heavy and thick. These noodles do not need to be pre-cooked in order to make wonderful lasagna. People differ on this idea and some people prefer to boil the noodles first before assembling the lasagna. Lasagna is typically repeating layers of pasta, ricotta cheese, and tomato sauce, 3 to 4 times in a baking pan. Most people own a 9” x 13” baking pan which works great but the traditional lasagna pan is larger and deeper sometimes allowing up to 5 layers of pasta.
