Brown Butter (an
absolute favorite for gnocchi)
4 T salted butter
2 T bread crumbs
1 sage leaf optional
Place the butter in a sauté pan over
medium heat. Add the sage leaf if using. Cook until the butter starts
to foam. Watch it very closely. The foam will begin to turn nut
brown. Now add the bread crumbs and remove from the heat. Toss with
the gnocchi immediately to coat.
